March Recipe of the Month

Perfect for an easy-to-grab breakfast or snack, chia seed pudding provides protein, fiber and omega-3 fatty acids. I choose to use Siggi's plain yogurt and unsweetened soy milk but you can personalize these ingredients to your preference just like the toppings.  When mixed with a liquid, chia seeds develop a unique, gel-like consistency. Adding granola can help change the texture of the pudding if desired. 



Overnight Chia Seed Pudding

4 servings


Ingredients + Instructions

  • At night, blend together the following with a fork:

    • 1 cup milk OR an unsweetened milk alternative

    • 1 cup plain Greek yogurt

    • 1 teaspoon vanilla

  • Mix ¼ cup + 2 TBSP chia seeds completely into the liquid ingredients

  • Cover and refrigerate overnight

  • In the morning, top with your choice of fresh or frozen fruit, chopped nuts, granola, coconut flakes, chocolate chips, honey, or whatever else sounds good to you!
