Tons of fresh herbs take this pasta salad from Gimme Some Oven to the next level.  



Lemon Orzo Salad

with Herbs and Garbanzo Beans


Ingredients

  • 12 ounces uncooked orzo (or another pasta)

  • 1 (15 ounce) can chickpeas (garbanzo beans), rinsed and drained

  • 1 English cucumber, diced

  • 1/2 small red onion (or shallot), diced

  • 1 cup fresh basil leaves, chopped

  • 1 cup fresh mint leaves, chopped

  • 2 handfuls of fresh greens like spinach or arugula, chopped

  • 1/2 cup feta (or goat) cheese, crumbled

  • 1 - 2 lemons, zested and juiced 

  • 1/4 cup olive oil

  • Salt and pepper, to taste 


Instructions

1. Prepare the Pasta. Cook orzo in salted water according to package instructions. Drain and rinse in cold water until chilled.

2. Combine Ingredients. Add all ingredients to a large bowl.  Toss until evenly combined.  Taste and add salt, pepper, additional lemon to taste. 

3. Serve immediately or cover and refrigerate for up to 3 days.
